Inspired by the tradition and trimmings of afternoon tea, but with a spirited twist. The Afternoon Tea Old Fashioned combines cocktail hour and tea time, with NEFT Vodka added to a bold spiced rooibos tea blend and topped with a hand-whipped vanilla chai cream. To prepare to serve up the Afternoon Tea Old Fashioned, you’ll need to make your hot tea ahead of time and give it time to cool. This cocktail takes a little extra work, but its incredible bold spiced flavor and creamy texture make it well worth the effort!

Step 1

Stir all ingredients with ice.

Step 2

Strain into rocks glass over fresh ice.

Step 3

Garnish with spooned chai vanilla whipped cream.

Here’s how to make the perfect reduction and whipped topping for your Afternoon Tea Old Fashioned.

Vanilla Rooibos Spiced Tea Reduction

Ingredients:

  • 16 oz (475 ml) Water

  • 1 tsp Vanilla Rooibos Tea

  • 5 tbsp Mulling Spices

  • 4 tbsp Raw Sugar

  • 2.5 oz (75 ml) Apple Cider Vinegar

Directions:

  1. Heat water, tea, spices, and sugar on low to medium heat for 5 minutes.

  2. Add apple cider vinegar and slowly bring to a low simmer for 10 minutes. Stir occasionally.

  3. Remove from heat and let rest for 5-10 minutes.

  4. Strain out particulates and let cool.

Makes enough Vanilla Rooibos Spiced Tea Reduction for up to 6 Afternoon Tea Old Fashioned cocktails.

Chai Vanilla Whipped Cream

Ingredients:

  • 2.5 oz (75 ml) Heavy Cream

  • .25 oz (10 ml) Chai Syrup

  • .25 oz (10 ml) Madagascar Vanilla

  • 1 tsp (5ml) Confectioners’ Sugar

Directions:

  1. Pre-chill a metal mixing bowl and whisk attachments in the freezer for 10 to 15 minutes before starting.

  2. Combine the heavy whipping cream, chai syrup, Madagascar vanilla, and confectioners’ sugar in the chilled bowl.

  3. Whip the ingredients together, starting at low speed and gradually increase to medium-high speed until soft peaks form.

  4. Use immediately or store in a sealed container in the refrigerator for up to 3 days.

Makes enough Chai Vanilla Whip for up to 2 Afternoon Tea Old Fashioned cocktails.
